Casein nitrate, a study has been conducted to determine the solubility of nitrate casein. Casein nitrate protein was fractionated by adding sodium benzenesulphonate and phenol to 250 cc of 0.2 N NaOH solution. The yields for each fraction were not quantitative, but they show a difference in phosphorus and nitrogen ratios. The solubility of casein nitrate in chloracetic acid was also determined. This substance is water-insoluble, insoluble in neutral salt solutions, and readily dispersed in dilute alkali and salt solutions. The solubility of casein nitrate in hydrochloric acid was then evaluated. This process was repeated a number of times, with varying results. It took three hours for the solubility to increase significantly.
The pH value of the casein nitrate solution was determined using a simple experiment. The resulting solution had a pH value of 4.6.
